Sugar industry

The sugar industry collection is the oldest collection in the Museum. TThe first items of the original collection came from the exhibition of the Trade-Commercial Chamber held in Prague in 1908 and the collection was gradually extended. The most important exhibit is a model of a sugar factory from 1908 in the scale 1:10 with the inventory number 1 representing a typical Czech sugar factory of the daily capacity 500 tons of sugar beet. The model is realized with the finest details and its dimensions are 8.7 m (width), 4.7 m (depth) and 3.5 m (height).

The samples of raw materials, intermediate products and products originated in the period between 1870 and 1890.

The group of laboratory instruments and equipment includes a unique collection of polarimeters (about 20 pieces) the oldest of which dates back to the period around 1860, the collection of laboratory glass, various densimeters, balances, pycnometers and flow meters.

Brewing industry

The current collections have been systematically organized since foundation of the Museum. At present, they count some 30 inventory numbers as a significant part of the original fund has been transferred to the Museum of Brewing in Pilsen.

The collection contains various engineering equipment and its components, including laboratory devices. An outstanding exhibit is a model of a steam-engine brewery from 1910–1920, a part of the plate from a fermentation vessel from 1780, old cooper's tools (1890–1910), aa bottle washer (1880), a bottle-filling machine (1880), a small experimental brewing set of the brewer Josef Koran (1860), brass densimeters (1850 – 1860), and signet ring with brewing emblem (1890).

Distilling industry

The present collections of distilling industry include approximately 50 inventory numbers. Most of them are various engineering installations and their models and laboratory equipment. Important exhibits are models of distilleries from 1890, 1908 and 1920, a model of potato and grain steamer from 1890, and a distillation apparatus from 1920. The collection also contains some 15 testing spirit meters of different producers from 1890 to 1930, and ten control densimeters from 1870–1930.

Milling industry

The collection of milling industry belongs to the oldest in the Museum. It currently contains about 40 inventory numbers. The collection includes various types of mills and their outfit, parts of milling equipment, craftsmen's tools, samples of raw materials, intermediate and final products, diagrams and flow-sheets of milling procedures. Important exhibits include a model of steam-engine mill from 1908, a model of wind mill (1860), a model of top-water mill (1860), a model of grinding mill (1910), a collection of milling tools (1890), a home mill for grain grinding (early 19th century), and millstones of various types (1890–1920).

Other fields of food industry

These collections cover the fields of dairy and baking industries, production of margarine, chocolate and sweets. The whole collection includes about 40 inventory numbers. Milk centrifuges Pfanhauser (1885) and Skoda (1930), a wooden model of a small bakery (1880–1900), a model of margarine production (1928–1930), a model of a chocolate factory (1920–1925), as well as models of machines and equipment from a chocolate factory (1910) represent the most interesting exhibits.
